Air Fryer Chicken Parmesan
Air fryer chicken parmesan with a crisp panko crust, melted mozzarella, and marinara in about 45 minutes, cooked to a safe 165°F.
Skip the splattering skillet and the greasy stovetop. Air fryer chicken parmesan gets a crisp, golden crust from a light coat of oil spray instead of a pan of hot oil. Thin cutlets go into a parmesan-panko coating, air fry until crunchy, and finish with marinara and bubbling mozzarella for the last couple of minutes. With a mid-size air fryer that cooks in two batches, dinner's on the table in about 45 minutes.
For the classic stovetop route, see the pan-fried chicken parmesan. If you'd like a gooey surprise inside, try the cheese-stuffed chicken parmesan.
Why the Air Fryer Works
Circulating hot air browns panko beautifully as long as the crumbs have a little fat on them. Thin, even cutlets cook through in about 10–12 minutes, before they can dry out. And because the sauce only goes on the center at the very end, the edges stay crisp.
Ingredient Notes
- Chicken breasts. Slice them in half horizontally and pound them to an even ½ inch. Thin-sliced cutlets from the store save a step.
- Flour, egg, and panko. The classic three-step breading: flour helps the egg stick, egg holds the crumbs, and panko's big flakes crisp up far better than fine breadcrumbs.
- Parmesan. Mixed into the crumbs for flavor and deeper browning.
- Italian seasoning and garlic powder. They keep the crust from tasting flat under the sauce.
- Oil spray. Don't skip it. Dry crumbs stay pale and dusty. An oil mister or avocado oil spray works best.
- Marinara and low-moisture mozzarella. Jarred or homemade sauce is fine. Low-moisture mozzarella melts without making the crust soggy.
Breading and Air Frying
- Make even cutlets. Pound them between sheets of plastic wrap to ½ inch.
- Set up three dishes. Seasoned flour, beaten egg, and the panko-parmesan mix.
- Bread and rest. Flour, egg, crumbs, pressing the crumbs on firmly. Let the cutlets sit 5 minutes so the coating sets.
- Preheat and spray. Heat the air fryer to 380°F, spray the basket, lay in the cutlets without touching, and spray the tops until every crumb looks damp.
- Air fry. 10–12 minutes, flipping and spraying halfway, until the thickest part reads 165°F.
- Sauce and cheese. Spoon marinara onto the center of each cutlet, add mozzarella, and air fry 2–3 minutes more.
How Many Fit in Your Air Fryer?
| Air fryer size | Cutlets per batch |
|---|---|
| 3–4 quart basket | 1–2 |
| 5–6 quart basket | 2 |
| 8+ quart basket or oven-style | 3–4 |
Keep the first batch warm on a rack in a 200°F oven while the second one cooks.
Troubleshooting
Not crispy. Not enough oil spray, a crowded basket, or no preheat. Spray until the crumbs look damp, leave space between cutlets, and preheat for 3 minutes.
Breading falls off. Pat the chicken dry, shake off extra flour, let extra egg drip away, press the crumbs on, and let the cutlets rest before cooking.
Dry edges, underdone center. The cutlets weren't even. Pound them to the same thickness all the way across.
Variations
- Sliders. Cut the cooked cutlets into pieces and pile them on slider buns with extra sauce.
- Eggplant parmesan. Use ½-inch eggplant slices, salted and patted dry, and air fry 10–12 minutes.
- Spicy. Add ½ teaspoon red pepper flakes to the crumbs and use arrabbiata sauce.
- Provolone. Swap it in for a sharper, deli-style flavor.
- Gluten-free. Use gluten-free flour and gluten-free panko.
Storing, Reheating, and Freezing
Refrigerate cooled cutlets within 2 hours. They keep 3–4 days. Reheat in the air fryer at 350°F for 4–5 minutes, until hot all the way through and crisp again. The microwave works but softens the crust. For a freezer stash, freeze breaded, uncooked cutlets (no sauce or cheese) in a single layer, then bag them. Air fry from frozen at 380°F for 14–16 minutes, flipping halfway, until they reach 165°F, then add the sauce and cheese.
Serve it over spaghetti or penne with extra marinara, with a Caesar salad, or with roasted broccoli or green beans. Garlic knots made from overnight cold-rise pizza dough turn it into a full Italian night. For a hands-off chicken dinner on a busier day, crockpot marry me chicken does the work while you're out. Cook's Tips
- Check at 9 minutes the first time. Air fryers vary a lot in how hot they run. A thermometer reading of 165°F in the thickest part is the only reliable test.
- Keep raw and cooked separate. Use one hand for the flour and crumbs and the other for the egg, and toss any leftover breading afterward. Don't reuse the plate that held the raw cutlets for serving.
- Warm the marinara first. Cold sauce cools the cutlet down, and the cheese melts before the sauce heats through.
Air Fryer Chicken Parmesan Questions
How long does it cook in the air fryer?
10–12 minutes at 380°F for ½-inch cutlets, flipping halfway, then 2–3 minutes more with the sauce and cheese.
Do I need to flip it?
Yes. Flip halfway and spray the second side so both sides brown and the bottom doesn't turn soft.
Can I use frozen breaded chicken?
Yes. Air fry it according to the package directions, usually 380–400°F for 12–15 minutes, until it reaches 165°F, then add the sauce and cheese for the last 2–3 minutes.
Is it healthier than fried chicken parm?
It uses much less oil than pan- or deep-frying, often about a tablespoon of spray for the whole batch, so it's usually lower in fat and calories.
