Heat the oven to 400°F. Pat the chicken dry and cut a pocket into the side of each breast, stopping before you cut through. Stuff each pocket with 2–3 tablespoons mozzarella and press the opening closed.

Set up three shallow dishes: flour mixed with seasoned salt and pepper, beaten eggs with garlic powder, and breadcrumbs mixed with ¼ cup Parmesan. Coat each chicken breast in flour, then egg, then breadcrumbs, pressing the crumbs onto the sides and pocket opening.

Heat the olive oil and butter in a large oven-safe skillet over medium. Brown the chicken in batches for about 4 minutes per side, until lightly golden. Move it to a plate; it will still be raw in the center.

Set the chicken back in the skillet, spoon marinara around and over it, and cover with the remaining mozzarella and Parmesan. Bake uncovered for 20 minutes, until the center reaches 165°F and the cheese is bubbling. Broil 1–2 minutes for extra color, watching closely, then rest 5 minutes.
