Heat the oven to 425°F. Slice the chicken breasts in half horizontally, cover them, and pound the pieces to about ½ inch thick. Pat them dry and season both sides with salt and pepper.

Set out the flour mixed with seasoned salt and pepper, the frothy beaten eggs, and the panko mixed with Parmesan, parsley, oregano, and garlic powder. Coat each chicken piece in flour, egg, then the crumb mixture, pressing the crumbs on gently.

Warm the vegetable oil in a skillet over medium-high heat. Fry the chicken in batches for 3–4 minutes per side, until golden, then move it to a wire rack so the bottom stays crisp.

Place the chicken on a light-colored baking sheet. Spoon marinara over each piece and cover with mozzarella. Bake uncovered for about 12 minutes, until the cheese melts and the chicken reaches 165°F.

Broil for 1–2 minutes if you want browned cheese, watching closely. Rest for a few minutes, then scatter on parsley and serve.
