Sweet Potato Casserole With Pecan Topping
Sweet potato casserole with pecan topping: roasted sweet potatoes, a crunchy brown sugar pecan streusel, and a make-ahead holiday plan.
Some people come for the turkey. A lot of people come for the sweet potatoes. This sweet potato casserole with pecan topping has a smooth, lightly spiced filling under a crunchy brown sugar streusel that people will pick at straight from the dish. And if your family is firmly team marshmallow, there's a way to keep them happy too.
The one thing that makes it better than most: the sweet potatoes are roasted, not boiled. Roasting concentrates their natural sugar and keeps extra water out, so the filling comes out rich and creamy instead of runny.
Ingredient Notes
Sweet potatoes. Grab the orange-fleshed kind, which U.S. stores often label "yams" even though they're sweet potatoes. Similar sizes roast evenly.
Butter and light brown sugar. Just a little sugar in the filling, so the topping can shine. Dark brown sugar gives a deeper molasses flavor.
Eggs. Two eggs make the filling light and a little soufflé-like, and they help it hold together on the plate.
Milk. Enough to make it smooth. Half-and-half makes it richer.
Vanilla, cinnamon, and nutmeg. The classic warm trio. A pinch of ginger or allspice is nice too.
The streusel. Brown sugar, flour, melted butter, and chopped pecans. The flour is what makes it bake up crisp instead of melting into a greasy layer.
From Oven to Table
- Roast. Prick the potatoes and roast them on a foil-lined sheet at 400°F for 50–60 minutes, until a knife slides in easily and syrup bubbles from the skins. That syrup welds itself to a bare pan, so don't skip the foil.
- Mash. Once they're cool enough to handle, the flesh slides right out of the skins. Mash it while it's still warm for the smoothest texture, or use a hand mixer for a minute.
- Mix. Beat in the butter, brown sugar, eggs, milk, vanilla, spices, and salt, then spread it in a buttered dish.
- Topping. Stir the brown sugar, flour, and salt together, add the melted butter until it looks like wet sand, and fold in the pecans. Stop as soon as it clumps.
- Bake. Scatter the topping over the filling and bake at 350°F for 30–35 minutes, until the edges bubble and the top is deep golden.
- Rest. Ten minutes lets the filling set and the topping crisp.
Pecans or Marshmallows?
| Pecan streusel | Mini marshmallows | |
|---|---|---|
| Texture | Crunchy and crumbly | Gooey and toasted |
| Sweetness | Medium | Very sweet |
| When it goes on | Before baking | Last 8–10 minutes |
| Make-ahead friendly | Yes, stored separately | Add fresh only |
Can't decide? Streusel on one half, marshmallows on the other. Just add the marshmallows for the last 8–10 minutes so they toast without burning.
A Holiday Make-Ahead Plan
| When | What to do |
|---|---|
| Up to 3 months ahead | Freeze the unbaked filling, without topping, tightly wrapped. Thaw overnight in the fridge. |
| Up to 2 days ahead | Roast, mash, and mix the filling. Spread it in the dish, cover, and refrigerate. Refrigerate the topping separately. |
| Holiday morning | Pull the dish out 30 minutes before baking. Add the topping and bake 40–45 minutes at 350°F, until the center is hot. |
Variations
- Bourbon. Two tablespoons in the filling.
- Orange zest. A teaspoon brightens everything.
- Maple. Use maple syrup in the filling instead of brown sugar.
- Nut-free. Swap the pecans for old-fashioned oats in the topping.
- Lighter. Use half the topping and sprinkle it down the center only.
- Squash blend. For a lighter, dairy-free twist on the same idea, try the butternut pecan sweet potato mash.
Serving and Storing
It belongs next to roast turkey, baked ham, or pork loin. Fill out the table with green bean casserole from scratch, sweet buttermilk cornbread, mashed potatoes, and cranberry sauce, and keep dessert easy with peach cobbler with cake mix.
Refrigerate leftovers within 2 hours. They keep 3–4 days. Reheat covered with foil at 350°F for 15–20 minutes so the topping doesn't scorch, or microwave single servings for 1–2 minutes. Leftovers also make a fun breakfast: the sweet potato casserole baked oatmeal turns the same flavors into a morning dish.
Cook's Tips
- Tent the top if it browns early. Ovens vary. If the streusel is dark before the edges bubble, lay a loose sheet of foil over the dish for the last 10 minutes.
- Shortcut with canned sweet potatoes. Use two 29-ounce cans, drained, and cut the brown sugar in the filling to 2 tablespoons, since they're already packed in syrup.
- Boiling instead of roasting? Peel and cube the potatoes, boil about 15 minutes until tender, then drain well and let them steam dry in the colander for 5 minutes before mashing. That keeps the filling from turning watery.
Sweet Potato Casserole Questions
Can I make it the day before?
Yes. Make the filling up to 2 days ahead and keep the topping separate. Add the topping right before baking and give it 40–45 minutes, since the filling starts cold.
Why is my casserole runny?
Usually watery boiled potatoes or too much milk. Roast the potatoes, or drain boiled ones very well.
Can I make it without eggs?
Yes. Leave them out and add 2 extra tablespoons of milk. It'll be a little denser, but still delicious.
How many does it serve?
About 10 as a holiday side, or 12 when there are lots of other dishes.
