Sheet Pan Shredded Chicken Nachos

Sheet pan shredded chicken nachos with two cheese layers so every chip gets topped — dinner or game-day snack.

Sheet pan chicken nachos with melted cheese, jalapeños, avocado, and sour cream

Sturdy tortilla chips, seasoned shredded chicken, black beans, and two layers of cheese bake on one sheet pan into nachos that actually stay crisp. These shredded chicken nachos take about 25 minutes with rotisserie chicken and serve 6 as a snack or 4 as dinner.

Season the chicken with homemade taco seasoning if you have a jar going. Cool toppings that fit: mango guacamole and crockpot corn dip.

Why Two Layers Matter

  • Chips on the bottom get cheese too. A second layer of chips and toppings keeps every bite loaded, not bare.
  • Rotisserie chicken. Already cooked, shreds easily, and warms through in the oven.
  • Sturdy chips. Thin restaurant-style chips shatter and sog. Use thick tortilla chips.
  • Hot toppings first, cold on after. Bake cheese and chicken; add guacamole, sour cream, and lettuce at the end.

What You'll Need

  • Rotisserie chicken. About 3 cups shredded. Leftover baked chicken works too.
  • Thick tortilla chips. One large bag.
  • Shredded cheese. A mix of cheddar and Monterey Jack melts well. Freshly grated melts cleaner than pre-shredded.
  • Black beans, taco seasoning, salsa. Drain and rinse the beans.
  • Cold toppings. Pico, guacamole, sour cream, jalapeños, cilantro, lime.

How to Make It

Heat the oven to 400°F. Toss the shredded chicken with taco seasoning and a spoonful of salsa so it isn't dry. On a large rimmed sheet pan, spread half the chips. Top with half the chicken, half the beans, and half the cheese. Repeat with the remaining chips, chicken, beans, and cheese. Bake 10–12 minutes, until the cheese is melted and the edges of the chips are toasty. Finish with cold toppings and a squeeze of lime. Serve right away.

Troubleshooting

  • Soggy chips. Toppings were too wet, or the nachos sat. Drain salsa and beans well, and eat them hot from the oven.
  • Bare chips. You piled everything in the center. Spread to the edges and use two layers.
  • Dry chicken. Toss it with salsa or a splash of broth before baking.
  • Burned edges. Oven ran hot or the pan was too high. Check at 10 minutes.

Nacho Topping Guide

Bake with: cheese, seasoned chicken, black beans, corn, pickled jalapeños. Add after baking: pico de gallo, mango guacamole, sour cream, shredded lettuce, cilantro, lime wedges. For a bigger game-day spread, see game day food.

Variations

  • BBQ chicken. Toss chicken in BBQ sauce instead of taco seasoning.
  • Breakfast. Add scrambled eggs and breakfast sausage.
  • Vegetarian. Skip chicken; double the beans and add sautéed peppers.
  • Air fryer. Build smaller batches in the basket at 350°F for 4–5 minutes.

Nachos for a Crowd

Use two sheet pans rather than overloading one. Hold baked nachos in a 200°F oven for up to 15 minutes before adding cold toppings. Plan about 6–8 ounces of chips per 4 people as a snack, more as a main.

What to Serve With Them

Mango guacamole, crockpot corn dip, Mexican rice, or a simple cabbage slaw. Leftover chicken from one pan Mexican chicken and rice also works on the chips.

Cook's Tips

  • Grate cheese yourself so it melts evenly.
  • Don't cover the pan with foil while baking; trapped steam softens chips.
  • Serve on the sheet pan to keep them hot and crisp longer.

Shredded Chicken Nachos Questions

How do I keep nachos from getting soggy?

Use sturdy chips, drain wet toppings, bake hot and fast, and add cold toppings after the oven.

What temperature do you bake nachos at?

400°F for 10–12 minutes is a reliable range for melted cheese without burning chips.

Why layer twice?

A single pile leaves bottom chips bare and top chips overloaded. Two layers spreads the goods.

What cheese is best?

Cheddar plus Monterey Jack (or a Mexican blend). Freshly grated melts better than bagged shreds.

Can I make them ahead?

Prep the chicken and grate the cheese ahead. Assemble and bake just before serving so chips stay crisp.
