One Pan Mexican Chicken and Rice

One pan Mexican chicken and rice with salsa, black beans, and corn: everything cooks in one skillet, including the rice.

Skillet of seasoned sliced chicken over tomato rice with lime, cheese, and green onion

Uncooked rice, seasoned chicken, black beans, corn, and salsa cook together in one deep skillet until the rice is tender and the chicken hits 165°F. This one pan Mexican chicken and rice takes about 50 minutes, feeds 6, and leaves you with a single pan to wash. Finish with melted cheese and whatever toppings you like.

Use homemade taco seasoning spices if you want to tweak the chili powder blend. Fresh sides that fit: mango guacamole and leftovers from sour cream chicken enchiladas night.

Why the Rice Cooks With the Chicken

  • Toasted rice. A minute in the pan before the liquid helps it stay separate, not mushy.
  • Tight lid, no peeking. Steam cooks the rice; lifting the lid dumps heat.
  • Chicken browned first. Color and flavor, then it finishes gently with the rice.
  • Salsa in the liquid. Adds tomato, spice, and salt so the rice isn't bland.

What You'll Need

  • Chicken breasts or thighs. Cut into 1-inch pieces.
  • Long-grain white rice. Not instant; not brown without a time change.
  • Salsa and chicken broth. The cooking liquid.
  • Onion, bell pepper, garlic.
  • Black beans, corn, chili powder, cumin, smoked paprika.
  • Shredded cheese and toppings. Avocado, cilantro, sour cream, lime.

How to Make It

Toss the chicken with part of the chili powder, cumin, smoked paprika, and salt. Brown it in oil over medium-high heat 4–5 minutes; it doesn't need to cook through yet. Move to a plate.

Sauté onion and bell pepper, then garlic and the remaining spices. Stir in the rice and toast 1 minute. Add salsa, broth, beans, corn, remaining salt, and the chicken with its juices. Bring to a boil, cover tightly, and simmer on low 18–20 minutes without lifting the lid. Rest covered 5 minutes. Confirm the chicken is 165°F. Sprinkle cheese, cover 2–3 minutes to melt, and add toppings.

Troubleshooting

  • Crunchy rice. Lid wasn't tight, heat was too high, or not enough liquid. Keep it covered on low; add a splash of broth and cook 5 more minutes if needed.
  • Mushy rice. Too much liquid, or it simmered too long. Measure broth and salsa; don't peek and stir.
  • Dry chicken. Pieces were too small or over-browned. Use 1-inch chunks and finish with the rice.
  • Bland. Under-salted, or mild salsa. Taste the liquid before covering and adjust salt.

Rice Swaps

RiceChange
Long-grain whiteAs written, 18–20 min
JasmineSame time; slightly stickier
Brown riceAbout 35–40 min; add ½ cup extra broth
Instant riceNot recommended here

Chicken Breasts or Thighs?

Both work. Breasts stay lean; thighs stay juicier if the simmer runs long. Cut either into even 1-inch pieces so they cook at the same rate as the rice.

Variations

  • Spicier. Hot salsa, extra chili powder, or diced jalapeño with the onion.
  • Vegetarian. Skip chicken; add an extra can of beans and diced zucchini.
  • Leftover chicken. Stir shredded cooked chicken in for the last 5 minutes instead of browning raw.
  • Meal prep. Cool, pack into containers, and refrigerate up to 4 days. Reheat with a splash of water to 165°F.

Storing

Refrigerate within 2 hours; eat within 3–4 days. Freeze up to 2 months; thaw overnight. Rice softens a little after freezing but still tastes good with fresh toppings.

What to Serve With It

Mango guacamole, tortilla chips, a simple salad, or shredded chicken nachos if you want a party spread. Warm tortillas turn leftovers into burritos.

Cook's Tips

  • Use a 12-inch deep skillet or Dutch oven so the rice has room.
  • Don't stir during the simmer; it releases starch and turns gummy.
  • Resting 5 minutes off heat finishes the rice.

One Pan Mexican Chicken and Rice Questions

Can you cook raw rice and chicken together?

Yes. Brown the chicken first, then simmer it with the rice and liquid until the rice is tender and the chicken reaches 165°F.

Why is my rice still crunchy?

The lid let out steam, or it needed a few more minutes. Add a splash of broth, cover, and cook 5 minutes more.

Can I use brown rice?

Yes, with more time and liquid — about 35–40 minutes and an extra ½ cup broth.

Is it good for meal prep?

Yes. It reheats well for 3–4 days. Add fresh avocado and cilantro after reheating.

Can I freeze it?

Yes, up to 2 months. Thaw in the fridge and reheat to 165°F with a splash of water or broth.
