Biscuits and gravy meet pizza: a crisp crust, creamy sausage gravy, scrambled eggs, and melted cheese. This sausage gravy breakfast pizza feeds 6 and works for brunch or a lazy Saturday dinner.

For the gravy on its own, see the country sausage gravy, or try the biscuits and gravy bake.

Why This Works: Sausage Gravy Breakfast Pizza

  • Prebaked crust. Six to eight minutes in the oven first keeps the crust crisp under the gravy.
  • Thick gravy. Simmered until it coats a spoon, so it spreads like sauce instead of soaking in.
  • Soft-scrambled eggs. Slightly underdone eggs finish in the oven without turning rubbery.
  • Lots of black pepper. It's the signature flavor of Southern sausage gravy.

What You'll Need

  • Pizza dough: Store-bought or homemade. Let it come to room temperature so it stretches easily.
  • Breakfast sausage: Regular or sage pork sausage. The drippings are the base of the gravy.
  • Flour and whole milk: Make the creamy gravy. Whole milk is richest.
  • Black pepper: Be generous. Sausage gravy should taste peppery.
  • Eggs: Softly scrambled.
  • Sharp cheddar: Melts into a golden top.
  • Green onions: Fresh color and a little bite.

How to Make It

1. Heat the oven to 425°F (220°C). Oil a rimmed baking sheet. Stretch the dough to fit the pan and prick it all over with a fork. Bake 6–8 minutes, until set and very lightly golden.

2. Meanwhile, brown the sausage in a large skillet over medium-high heat, breaking it up, 7–8 minutes. Don't drain. You need about 3 tbsp of fat. Add the butter if the pan looks dry.

3. Sprinkle the flour over the sausage and stir 1–2 minutes.

4. Slowly whisk in the milk. Simmer 3–4 minutes, stirring, until thick enough to coat a spoon. Season with pepper, salt, and pepper flakes. It should be thick, not runny.

5. In a nonstick skillet over medium-low heat, melt 1 tbsp butter and softly scramble the eggs until just set but still slightly wet, 2–3 minutes. They'll finish in the oven.

6. Spread the gravy over the prebaked crust. Scatter the eggs on top and sprinkle with cheddar.

7. Bake 10–12 minutes, until the crust is golden and the cheese is melted. Top with green onions, slice, and serve.

Troubleshooting

  • Bland gravy: the most common problem. Sausage gravy needs plenty of black pepper and a little salt. Taste at the end and don't be shy.
  • Runny gravy: It needed more simmering or a bit more flour. Simmer until it coats a spoon.
  • Too thick: It thickens more as it cools. Whisk in a splash of milk to loosen it.
  • Lumpy gravy: The milk went in all at once. Pour slowly while whisking.
  • Soggy crust: Skipping the prebake. Always bake the crust first.
  • Rubbery eggs: Fully cooked before baking. Pull them while they're still a little wet.

  • Veggie: Add sautéed peppers, onions, and spinach.

Breakfast Pizza for a Crowd

One sheet pan makes about 8 large slices. For 12–16 people, make two pans and bake them on two racks, swapping halfway. Make the gravy a day ahead to save time in the morning. Just rewarm it with a splash of milk until spreadable.

Storing

Refrigerate leftovers up to 3 days. Reheat in a 375°F oven or air fryer for 5–6 minutes to keep the crust crisp.

Sausage Gravy Breakfast Questions

How do you make sausage gravy from scratch?

Brown 1 lb breakfast sausage, keep the drippings, stir in 3 tablespoons flour for 1–2 minutes, then slowly whisk in 1½ cups milk and simmer until thick. Season generously with black pepper.

Why is my sausage gravy bland?

It usually needs more black pepper and salt. Sausage brands vary, so taste at the end. A pinch of red pepper flakes or sage also helps.

Why is my sausage gravy runny?

It needs more simmering or a little more flour. Simmer 2–3 more minutes. If it's still thin, sprinkle in 1 more teaspoon of flour and stir well.

Why is my breakfast pizza soggy?

The crust wasn't prebaked, or the gravy was too thin. Prebake the crust 6–8 minutes and keep the gravy thick.

Can I make sausage gravy breakfast pizza ahead?

Make the gravy up to 2 days ahead and refrigerate. Rewarm it with a splash of milk before spreading. Bake the pizza fresh.
