Meal Prep Crock Pot Recipes

Meal prep crock pot recipes that still taste good on Thursday: soups, stews, shredded meat, and a freezer sauce, with portions and safe storage.

Easy isn't the bar here. Good on Thursday is. The best meal prep crock pot recipes are the ones that still taste right after a few days in the fridge and a trip through the microwave: soups, stews, saucy shredded meat, and a big pot of meat sauce. Cook one batch on Sunday, portion it out, and you've got lunches or dinners for the week with a few extra for the freezer.

What Holds Up All Week

Plenty of slow cooker meals are great the first night and sad by day three. The keepers:

  • Reheat without drying out. Soups, stews, and saucy meats stay moist.
  • Keep the soggy parts separate. Pasta, rice, and crunchy toppings get stored on their own.
  • Make a big batch. Six to ten servings from one pot.
  • Freeze well. So future-you gets a night off too.

Soups and Stews for the Week

Soup is the easiest thing to prep. It portions cleanly, reheats evenly, and most of it freezes for 3 months.

Crockpot minestrone soup8Yes, without the pasta
Crockpot Chicken Enchilada Soup8Yes, before the cheese goes in
Crockpot Beef Stew8Yes, though the potatoes soften a bit

One Protein, Three Meals

Cook one big batch of meat and change how you serve it so nobody gets bored.

  • Pulled pork piled on a bun Slow Cooker Pulled Pork (feeds 8). Sandwiches Monday, rice bowls Wednesday, quesadillas Friday.
  • Crockpot Chicken Fajitas (serves 6). Tortillas, burrito bowls, or on top of a salad.
  • Crockpot honey garlic chicken (serves 6). Over rice with broccoli, rolled into wraps, or on greens.

A Sauce for the Freezer

Slow Cooker Bolognese makes about 10 servings. Freeze it flat in quart bags, about 2 cups each, which is enough for 4 servings over ½ pound of pasta. Boil the pasta fresh each time and it's never mushy.

Meal Prep Crock Pot Portions and Storage

Soup, stew, or chili1½–2 cups3–4 days3 months
Shredded pork or chicken4–5 oz (about ¾ cup)3–4 days3 months
Meat sauceAbout ½ cup over pasta3–4 days3 months
Cooked rice¾–1 cup3–4 days2 months
Dairy-heavy soup1½ cups3 daysFreeze before adding dairy

Only prep as many meals as you'll really eat. If leftovers only show up three times a week, freeze the rest the day you cook.

Cooling It Down Safely

  1. Turn off the slow cooker and scoop the food out of the insert right away.
  2. Divide it into shallow containers, no more than 2–3 inches deep, so it cools fast.
  3. Get everything into the fridge within 2 hours of cooking.
  4. Label with the name and date. Painter's tape and a marker work fine.
  5. Freeze anything you won't eat in 3–4 days that same day.

Don't put the hot ceramic insert in the fridge. That big, heavy crock holds heat for hours, so the food cools too slowly, and the sudden temperature change can crack it.

Containers Worth Having

ContainerBest forWhy
Glass with snap lidsSoups, stews, bowlsMicrowave-safe and won't stain
Quart freezer bagsSoups and saucesFreeze flat, thaw fast
Wide-mouth jarsSoupLeave an inch of headspace if freezing
Little sauce cupsToppingsKeeps sour cream, salsa, and cheese separate

Glass is worth the cost if you reheat at work. Tomato sauce stains plastic and it hangs on to smells.

Mix and Match

Cook two bases on Sunday, then combine them differently:

  • Fajita chicken + rice + black beans = burrito bowl
  • Pulled pork + coleslaw + bun = sandwich
  • Bolognese + pasta + mozzarella = quick baked pasta
  • Leftover fajita chicken stirred into taco soup = a heartier bowl

A Sunday Plan

WhenWhat to do
MorningStart the taco soup on LOW for 6–7 hours
MiddayCook a pot of rice and roast a tray of vegetables
AfternoonPortion 4 soups for lunches and freeze 4 more
EveningPack rice bowls, toppings on the side

Cook's Tips

  • Store shredded meat with its juices. Spoon a few tablespoons of cooking liquid over each container. Dry meat is the number one reason people quit meal prep.
  • Reheat to steaming. Leftovers should hit 165°F all the way through. Stir soups halfway through microwaving so there are no cold spots.
  • Thaw frozen portions in the fridge. Move tomorrow's container from freezer to fridge tonight. It reheats faster and more evenly than a frozen brick.
