Brown Sugar Glazed Roasted Carrots

Brown sugar glazed roasted carrots with butter and a pinch of salt: caramelized edges, tender centers, and a 30-minute side.

Two tablespoons of brown sugar is all it takes to glaze two pounds of carrots, as long as it goes on at the right time. These brown sugar glazed roasted carrots roast plain at high heat until they start to brown, then get a butter, brown sugar, and thyme glaze for the last 10 minutes. They come out tender, lightly sweet, and caramelized at the edges, not candied.

They take about 40 minutes, mostly hands-off, and serve 6. For an unglazed version with just oil and garlic powder, see these roasted carrots.

Why the Glaze Goes On Last

Brown sugar scorches at 425°F long before a carrot is tender. Roasting the carrots plain for 20 minutes gives them time to soften and brown; the glaze then needs only 8–10 minutes to turn glossy and caramelize at the edges. A pinch of cayenne and fresh thyme keep the sweetness in check, and cutting the carrots on an angle gives each piece more surface to brown.

What You'll Need

  • Carrots. Medium carrots, peeled and cut on an angle into ½-inch pieces. Halve thick ends lengthwise so every piece is about the same size.
  • Olive oil, salt, and pepper. For the first roast.
  • Butter and brown sugar. Light brown sugar is milder; dark brown has a deeper molasses flavor.
  • Thyme. Fresh or dried. Rosemary also works.
  • Cayenne (optional). A pinch balances the sweetness without adding real heat.
  • Parsley and flaky salt. For color and crunch at the end.

How to Make Them

Heat the oven to 425°F and line a large rimmed baking sheet with parchment. Toss the carrots with oil, salt, and pepper and spread them in a single layer with a little space between pieces. Roast 20 minutes, stirring once, until they're starting to brown.

While they roast, melt the butter with the brown sugar, thyme, and cayenne in a small saucepan or in the microwave, stirring until the sugar dissolves. Pour it over the carrots, toss right on the pan, and roast 8–10 minutes more, until a fork slides in easily and the glaze is glossy. Finish with parsley and flaky salt.

Troubleshooting

  • Too sweet. Many recipes use ¼ cup of sugar or more. Two tablespoons is plenty; add more only if you want.
  • Watery glaze. The pan was crowded, so the carrots steamed. Use a large pan and a single layer.
  • Burned glaze. The sugar went on too early. Add it only for the last 8–10 minutes.
  • Uneven doneness. Pieces were different sizes. Aim for ½ inch all around.
  • Mushy carrots. They roasted too long. Start checking at 25 minutes total.

Swaps and Variations

Brown sugarHoney or maple syrupMore floral; check at 6 minutes since they brown faster

Orange carrotsRainbow carrotsMore color; purple ones can tint the glaze
  • Honey garlic. Use honey and add a minced garlic clove to the butter.
  • Maple Dijon. Use maple syrup and whisk in 1 teaspoon Dijon.
  • Orange. Add 1 teaspoon orange zest and 1 tablespoon orange juice to the glaze.
  • Holiday spice. Add ¼ teaspoon cinnamon and a pinch of nutmeg.

Stovetop and Air Fryer Options

  • Stovetop. Simmer the carrots, covered, in ½ cup salted water for 8–10 minutes, until just tender. Uncover, add the butter, brown sugar, and thyme, and cook 3–4 minutes, stirring, until the liquid turns into a glossy glaze.
  • Air fryer. Air fry the oiled carrots at 400°F for 12–14 minutes, shaking once. Toss with the melted glaze and air fry 2–3 minutes more.

For a Holiday Table

Plan on about ⅓ pound of carrots per person. For 12, double the recipe and use two sheet pans on two racks, swapping their positions halfway; piling 4 pounds onto one pan steams them. To save oven time on the day, roast them plain up to 2 days ahead, refrigerate, then glaze and reheat at 425°F for 10–12 minutes while the main dish rests.

They sit nicely next to garlic butter roasted potatoes, green bean casserole from scratch, crockpot corn casserole, and sweet potato casserole with pecan topping. On a weeknight, they're a bright side for garlic butter steak bites and potatoes or tuna noodle casserole without canned soup.

Storing Leftovers

Refrigerate within 2 hours in an airtight container and eat within 3–4 days. Reheat in a 400°F oven for 8–10 minutes or in the microwave until hot.

Cook's Tips

  • Dry the carrots after peeling or rinsing. Wet carrots steam before they brown.
  • Use parchment. The glaze caramelizes on it instead of welding to the pan.
  • Taste the glaze before pouring. Adjust the salt now; it's harder to fix later.
  • Toss with a thin spatula. It scrapes up the glaze and turns the pieces without breaking them.

Glazed Carrot Questions

What temperature is best for roasting carrots?

425°F. High heat browns the outside while the inside turns tender. Lower heat tends to steam them.

How long do they take?

About 28–30 minutes for ½-inch pieces: 20 minutes plain, then 8–10 minutes with the glaze.

Do I need to peel the carrots?

No. Peeled carrots look neater and glaze more evenly, but well-scrubbed unpeeled carrots taste a little earthier and work fine.

Can I make them ahead?

Yes. Roast them plain up to 2 days ahead and refrigerate. Glaze and reheat at 425°F for 10–12 minutes before serving.

Can I roast carrots and potatoes together?

Yes. Cut them the same size and give the potatoes a 5-minute head start. Glaze only the carrots, or toss everything in garlic butter instead.
