Shredded Zucchini Recipes

Shredded zucchini recipes for garden season: chocolate zucchini bread, crispy fritters, and easy ways to use it up, plus how to squeeze and freeze it.

Every August, somebody leaves a zucchini the size of a baseball bat on your counter. Good news: once it's grated, it disappears into almost anything. These shredded zucchini recipes turn a garden haul into chocolate bread, crispy fritters, juicier meatballs, and weeknight sauces, and picky eaters rarely notice it's there. There's just one step you can't skip, and that's getting the water out.

Shred It, Then Squeeze It

  1. Wash and trim the ends. No need to peel; the skin is thin and soft.
  2. Grate on the large holes of a box grater, or run it through a food processor's shredding disc.
  3. Salt it for fritters. Toss with ½ teaspoon salt per 2 cups and let it sit 10 minutes to pull out more water.
  4. Squeeze. Pile it into a clean kitchen towel, twist, and wring it over the sink until it barely drips.
  5. Measure after squeezing. It shrinks a lot.

How hard you squeeze depends on the recipe. Wring it bone-dry for fritters and anything you fry. For breads and muffins, a gentle squeeze is enough, because the batter needs some of that moisture.

How Much You'll Get

Oversized garden zucchini have big, spongy seeds. Scoop out the center before you grate.

Chocolate Zucchini Bread

If someone in your house swears they hate zucchini, start here. The Chocolate Zucchini Bread hides the green under cocoa, and the zucchini keeps the loaf moist for days. Plan on about an hour and 15 minutes; it makes 10 slices. Let it cool all the way before slicing or it'll tear.

Crispy Zucchini Fritters

Zucchini Fritters are the classic savory use, and they're ready in about 30 minutes. For the crispiest batch:

  • Squeeze the zucchini as dry as you possibly can.
  • Heat the oil over medium-high until it shimmers.
  • Leave room between fritters so they fry instead of steam.
  • Flip once, when the edges are deep golden.

Serve them with sour cream, Greek yogurt, or tzatziki.

Meatballs. Add ½ cup squeezed zucchini per pound of ground meat, plus 2 extra tablespoons of breadcrumbs. It keeps lean turkey meatballs, like these teriyaki turkey meatballs, noticeably juicier.

Meat sauce. Stir 1–2 cups into the pot with the onions at the start of a slow cooker bolognese. By the end, it's melted in completely.

Egg bites. Whisk 8 eggs with ½ cup squeezed zucchini, ½ cup shredded cheese, salt, and pepper. Divide between 12 greased muffin cups and bake at 350°F until the centers are set, about 20 minutes.

Overnight oats. Two tablespoons finely grated zucchini, ¼ teaspoon cinnamon, and a tablespoon of walnuts stirred into overnight oats taste a lot like zucchini bread.

Soup. Add a cup to vegetable soup during the last 10 minutes. It thickens the broth slightly. It's great in crockpot minestrone.

Muffins. Fold 1 cup lightly squeezed zucchini and ½ teaspoon cinnamon into your usual 12-muffin batter. Bake at 350°F for 20–25 minutes, until a toothpick comes out clean.

Too Big to Shred?

Halve the giant ones into boats instead. Mediterranean Stuffed Zucchini takes about an hour and serves 4. Chop the scooped-out flesh and add it to the filling so nothing goes to waste.

Freeze It for Later

  1. Shred and squeeze.
  2. Pack 1 cup into each freezer bag.
  3. Press flat, push out the air, and date the bag.
  4. Freeze up to 6 months.

Thaw it in a colander, then squeeze again, since more water comes out after freezing. Frozen zucchini is best for baking, sauces, and soups. It's too soft for fritters.

Picking and Storing

Medium zucchini, 7–8 inches long, have small seeds and firm flesh. Look for shiny skin and a heavy feel with no soft spots. Store it unwashed in the crisper drawer up to a week. Yellow summer squash works in every idea here too; it's a little softer, so squeeze it just as well.

Cook's Tips

  • Grate lengthwise. Run the whole zucchini down the large holes of the grater. Long shreds hold fritters together better and don't turn to mush in bread.
  • Save the liquid if you didn't salt it. Unsalted zucchini water is mild, so it can stand in for some of the stock in a vegetable soup. Skip it if you salted the shreds.
  • Salt fritter batter right before cooking. Once salt hits the mixture, it keeps pulling water. Mix, then fry right away.

Zucchini Questions

Do you peel zucchini before shredding?

No. The skin is thin, soft, and adds color. Just wash and trim.

Should I squeeze zucchini for bread?

Lightly. Bread recipes count on some moisture. For fritters, squeeze hard.

Why are my fritters soggy?

The zucchini was too wet, the pan wasn't hot enough, or the pan was crowded. Squeeze hard, use medium-high heat, and cook in batches.

How do I hide zucchini from picky eaters?

Grate it finely and fold it into meatballs, meat sauce, or anything chocolate.
