No-Bake Biscoff Cheesecake
No-bake Biscoff cheesecake with a cookie crust and cookie-butter topping that sets overnight in the fridge.
Cookie butter and crushed Biscoff cookies make a no-bake cheesecake that sets in the fridge overnight — no water bath, no cracked top, no oven. This no-bake Biscoff cheesecake takes about 25 minutes of active work, needs at least 6 hours to chill, and slices into 12 creamy wedges.
For other low-effort sweets, see no-bake cookies and peach cobbler with cake mix. Holiday mornings pair well with monkey bread with canned biscuits.
Why This One Sets Cleanly
- Full-fat block cream cheese. Tubs of whipped cream cheese are too soft and often won't firm up.
- Whipped cream folded in. It lightens the filling and helps it hold slices.
- Real cookie butter in the filling and on top. That spiced caramel flavor is the whole point.
- Long chill. Six hours minimum; overnight is better.
What You'll Need
- Biscoff cookies and Biscoff cookie butter. Lotus Biscoff is the usual brand; store generic speculoos works.
- Full-fat block cream cheese. Softened to room temperature so it beats smooth.
- Powdered sugar, vanilla, salt.
- Cold heavy cream. Whip it in a cold bowl.
- Butter for the crust.
- 9-inch springform pan. A deep pie dish works in a pinch, but slices are cleaner from a springform.
How to Make It
Line the springform with parchment. Crush the cookies to fine crumbs and mix with melted butter until it looks like wet sand. Press firmly into the pan and chill while you make the filling.
Beat the cream cheese until completely smooth, then beat in powdered sugar, cookie butter, vanilla, and salt. In a separate cold bowl, whip the cream to stiff peaks. Fold the cream into the cookie-butter mixture in two additions until no streaks remain. Spread over the crust, cover, and refrigerate at least 6 hours or overnight.
Before serving, warm a little cookie butter for 15–20 seconds, spread it on top, and sprinkle crushed cookies. Run a thin knife around the edge, release the ring, and slice with a hot, wiped knife.
Troubleshooting
- Didn't set. Cream cheese was whipped-style, cream wasn't whipped to stiff peaks, or it didn't chill long enough.
- Lumpy filling. Cream cheese was cold. Soften it fully and beat alone first.
- Too sweet. Biscoff is already sweet; stick to the powdered sugar amount and skip extra toppings.
- Crumbly crust. Not enough butter, or crumbs weren't pressed firmly.
- Messy slices. Cheesecake was warm, or the knife wasn't wiped between cuts. Chill well; dip the knife in hot water and wipe each time.
Make-Ahead Timeline
| When | What to do |
|---|---|
| 1–2 days ahead | Build crust and filling; chill covered |
| Morning of | Add cookie-butter topping and cookie crumbs |
| Serving | Slice with a hot knife |
| Leftovers | Fridge up to 4 days; freeze slices up to 1 month |
Variations
- Mini cups. Press crust into muffin liners and chill 4 hours.
- Chocolate drizzle. Melted dark chocolate over the cookie-butter topping.
- Different cookie. Gingersnaps or graham crackers for the crust if you can't find Biscoff; keep cookie butter in the filling.
Storing
Refrigerate covered up to 4 days. Freeze individual slices wrapped well up to 1 month; thaw overnight in the fridge. Don't leave it out more than 2 hours.
What to Serve With It
Coffee, berries, or a scoop of vanilla ice cream. For a dessert spread, add peach cobbler with cake mix or browse easy dessert recipes.
Cook's Tips
- Soften cream cheese on the counter 30–45 minutes; don't microwave it soft or it turns greasy.
- Whip cream last so it doesn't deflate while you wait.
- Chill the bowl and beaters for the cream if your kitchen is warm.
No-Bake Biscoff Cheesecake Questions
Why didn't my no-bake cheesecake set?
Usually soft cream cheese, under-whipped cream, or a short chill. Use block cream cheese, whip to stiff peaks, and give it overnight.
How long does it need to chill?
At least 6 hours. Overnight is more reliable for clean slices.
Can I freeze it?
Yes. Freeze whole or sliced, well wrapped, up to 1 month. Thaw in the fridge.
Can I make it without a springform?
Yes. Use a deep 9-inch pie dish and slice wedges from the dish, or line a square pan with parchment and lift out to cut squares.
Does it contain gelatin?
No. The set comes from cream cheese and whipped cream.
