Why This Works: Instant Pot Baked Potato Soup

  • Starchy russet potatoes. They break down and thicken the soup naturally.
  • Half mashed, half chunky. Creamy body with hearty bites of potato.
  • Bacon fat for sautéing. Smoky flavor in every spoonful.
  • Dairy added after cooking. No burn warning, no curdling.
  • Cream cheese and sour cream. Rich, tangy, "loaded potato" flavor.

What You'll Need

  • Bacon: Cooked first. The crispy bits are for topping, and the fat is for the onions.
  • Onion and garlic: The flavor base.
  • Russet potatoes: Peeled or not. Cut into 1-inch cubes.
  • Chicken broth: Low-sodium.
  • Milk, cream cheese, and sour cream: Make the soup creamy and tangy.
  • Sharp cheddar: Shred it yourself for the smoothest melt.
  • Green onions or chives: For topping.

How to Make It

Set the Instant Pot to Sauté. Cook the bacon 6–8 minutes until crisp. Remove with a slotted spoon and set aside. Leave about 2 tablespoons of fat in the pot. Add the onion and cook 3–4 minutes until soft. Stir in the garlic for 30 seconds. Pour in ½ cup of the broth and scrape the bottom of the pot well. This prevents a burn warning.

Add the potatoes, remaining broth, salt, pepper, and garlic powder. Stir. Lock the lid, set the valve to Sealing, and cook on HIGH pressure for 8 minutes. Let the pressure release naturally for 10 minutes, then quick release the rest.

Mash about half the potatoes right in the pot, leaving some chunks. Set to Sauté (low or normal). Stir in the milk and cream cheese until melted. Turn off the heat. Stir in the sour cream and cheddar until melted. Taste and adjust the salt.

Serve topped with bacon, green onions, extra cheese, and sour cream.

Troubleshooting

  • Watery soup: the most common problem. Too much broth or waxy potatoes. Use russets, mash half, and simmer on Sauté for a few minutes if needed.
  • Bland soup: Potatoes need a lot of salt. Season during cooking and again at the end.
  • Burn warning: Browned bits on the bottom. Deglaze and scrape well before sealing.
  • Curdled or grainy soup: Dairy boiled or went in under pressure. Add dairy after cooking, over low heat.
  • Too thick the next day: Normal. Add milk or broth when reheating.

Instant Pot Timing Guide

Come to pressure—About 10–12 min
Pressure cookHIGH8 min
Natural release—10 min

Coming up to pressure takes longer when the pot is full, so plan on about 45 minutes from start to bowls. Cut the potatoes into even 1-inch cubes so they all soften at the same time.

Instant Pot Baked Potato Soup Substitutions

  • Chicken broth: Use vegetable broth and skip the bacon for vegetarian soup.
  • Sour cream: Use plain Greek yogurt.
  • Cheddar: Use pepper jack or a Mexican blend.
  • Milk: Use half-and-half for an extra-rich soup.

Variations

  • Broccoli cheddar potato: Stir in 2 cups steamed broccoli florets with the cheese.
  • Ham and potato: Add 2 cups diced ham instead of bacon.
  • Chicken: Add 2 cups shredded rotisserie chicken.
  • Spicy: Add a diced jalapeño with the onion and use pepper jack.
  • Slow cooker: Cook the potatoes, onion, garlic, and broth on LOW 6–7 hours, then mash and add the dairy.

Storing

Refrigerate up to 4 days. The soup thickens as it cools, so add milk or broth when reheating. Warm it on the stove over medium-low heat, stirring often, or microwave individual bowls, stirring every minute.

For freezing, freeze before adding the dairy for up to 3 months. Thaw, reheat, and stir in the dairy.

Instant Pot Baked Questions

Why is my baked potato soup watery?

Too much broth, waxy potatoes, or not enough mashing. Use starchy russets, mash half the potatoes, and add the dairy at the end. For extra thickness, simmer on Sauté for 5 minutes.

Why is my potato soup bland?

Potatoes soak up a lot of salt. Season well, use sharp cheddar and bacon, and taste at the end. A splash of hot sauce or a pinch of garlic powder also helps.

Why did I get a burn warning?

Bits stuck to the bottom after sautéing. Deglaze with broth and scrape well before pressure cooking. Don't add dairy before pressure cooking.

Can I add milk before pressure cooking?

No. Dairy can scorch and curdle under pressure. Add milk, cream cheese, sour cream, and cheese after.

Do I need to peel the potatoes?

No. Leaving the skins on gives a rustic, 'baked potato' texture. Scrub them well.
