Crockpot Rotel Dip With Sausage
Crockpot Rotel dip with sausage and Velveeta: classic party dip that stays warm on WARM.
Browned sausage, Rotel, and cubes of Velveeta melt into the classic party dip without babysitting a stove. This crockpot Rotel dip with sausage stays on WARM for the whole game and serves a crowd.
For another version, see the classic Rotel dip.
Why This Works: Crockpot Rotel Dip With Sausage
- Well-drained sausage. All the savory flavor without an oily layer on top.
- Partly drained Rotel. Enough juice for flavor, not so much that the dip gets thin.
- Cream cheese. Makes the dip extra creamy and keeps it from getting stiff as it sits.
- Low and slow. Melting on LOW keeps the cheese from scorching.
- WARM setting. The dip stays smooth through the whole game.
What You'll Need
- Breakfast sausage: Regular or hot, in a roll. Italian sausage works too.
- Velveeta: It melts smoothly and stays creamy for hours without separating.
- Cream cheese: Adds richness and body.
- Rotel: Canned diced tomatoes with green chiles. "Original" is mild-medium, and "Hot" has more kick.
- Garlic powder and cumin: A little extra flavor.
- Milk: Only if the dip needs thinning.
How to Make It
Break it into small crumbles and cook until no pink remains.
Use a colander or paper towels.
Pour off about half the juice.
Add everything to the slow cooker.
LOW 2–3 hours, stirring every 30 minutes.
Switch to WARM and add toppings.
Troubleshooting
- Watery dip: The most common problem. Two cans of Rotel add a lot of liquid. Pour off half the juice. If it's already thin, cook it uncovered on HIGH for 20–30 minutes.
- Greasy dip: The sausage wasn't drained. Drain it well, and blot it with paper towels.
- Scorched edges: It wasn't stirred, or it cooked on HIGH too long. Stir regularly and use LOW or WARM.
- Thick, stiff dip: It sat on WARM too long. Stir in a splash of milk.
- Grainy dip: Shredded cheddar was used instead of Velveeta. Processed cheese is what keeps it smooth.
Serving Sizes for Parties
| Guests | Batch | Slow cooker size |
|---|---|---|
| 8–10 | Half batch | 2–3 quart |
| 14–18 | Full batch (this recipe) | 4–6 quart |
| 25–30 | Double batch | 6–7 quart |
Plan on about 1 large bag (13 oz) of tortilla chips for every 8 guests.
Velveeta vs. Real Cheese
| Cheese | Texture after 3 hours warm | Notes |
|---|---|---|
| Velveeta (this recipe) | Smooth and creamy | Made to melt and stay melted |
| Deli American cheese | Smooth | Ask for a 1-lb block. It has a slightly sharper flavor |
| Shredded cheddar only | Grainy, oily | Anti-caking coatings and aged cheese separate as they sit |
| Mix of Velveeta and cheddar | Mostly smooth | Use no more than 25% cheddar for extra flavor |
If you want to use real cheese, go half American and half freshly shredded Monterey Jack, add ½ cup milk, and keep the dip on LOW instead of HIGH.
Food Safety at Parties
Keep the dip at 140°F or higher. The WARM setting on most slow cookers does this. Don't leave it unplugged for more than 2 hours. If you're serving it outside, stir and check it more often.
Variations
- Beef: Use ground beef with taco seasoning instead of sausage.
- Chorizo: Use Mexican chorizo for a smoky, spicy dip.
- Black bean: Stir in 1 can of drained black beans.
- Buffalo: Add ¼ cup hot sauce and top with blue cheese crumbles.
- Extra creamy: Add ½ cup sour cream right before serving.
- Stovetop: Melt everything in a saucepan over medium-low heat, stirring constantly, for 10–15 minutes.
Make Ahead for Game Day
The night before: Brown and drain the sausage, cube the cheese, and store it all in the slow cooker insert in the fridge.
Game day: Put the insert in the base (adding 30 minutes of cooking time since it's cold) and cook on LOW.
Reheat leftovers: Microwave in 30-second bursts, stirring in between, with a splash of milk.

Crockpot Rotel Dip Questions
Why is my Rotel dip watery?
The Rotel juice and undrained sausage add extra liquid. Pour off about half the juice from each can and drain the sausage well. If it's already watery, cook it uncovered on HIGH for 20–30 minutes, stirring.
Should you drain Rotel for queso dip?
Partly. Pour off about half the juice. You keep the flavor without making the dip thin.
How long does Rotel dip take in the crockpot?
2–3 hours on LOW or 1–1½ hours on HIGH, stirring regularly until smooth.
Can I make Rotel dip without Velveeta?
Velveeta is what keeps it smooth for hours. You can use 16 oz American cheese from the deli plus 8 oz shredded cheddar, but real cheddar alone can turn grainy and oily.
Can I use ground beef instead of sausage?
Yes. Brown 1 lb ground beef with 1 tablespoon taco seasoning and drain it well.
