Crockpot Hamburger Soup

Crockpot hamburger soup with browned beef, potatoes, and vegetables — a budget freezer-friendly bowl.

Ground beef vegetable soup in a red Dutch oven

Browned ground beef, potatoes, carrots, and tomatoes simmer into a filling bowl that tastes like a hamburger deconstructed. This crockpot hamburger soup is budget-friendly, freezes well, and feeds 6–8.

If you'd rather make it on the stove in about 45 minutes, see the classic hamburger soup.

Why This Works: Crockpot Hamburger Soup

  • Browned beef and tomato paste. This builds deep, savory flavor that slow cooking alone can't create.
  • Deglazed skillet. The browned bits stuck to the pan go into the soup, not down the sink.
  • Yukon Gold potatoes. They stay in cubes instead of falling apart after hours of cooking.
  • Frozen vegetables added last. Corn and green beans stay bright and sweet.
  • A splash of vinegar at the end. It wakes up the whole pot so it doesn't taste flat.

What You'll Need

  • Ground beef: 90/10 is lean enough that you don't get a greasy soup, with enough fat for flavor. Drain it after browning.
  • Onion and garlic: The base of the soup.
  • Tomato paste: Cooked for a minute with the beef, it adds rich, deep tomato flavor.
  • Potatoes: Yukon Golds, in ½-inch cubes.
  • Carrots and celery: Classic soup vegetables that hold up to long cooking.
  • Diced tomatoes and beef broth: The broth base. Use low-sodium broth so you can control the salt.
  • Worcestershire, Italian seasoning, smoked paprika, bay leaf: Savory depth and a little smokiness.
  • Frozen corn and green beans: Added at the end.
  • Red wine vinegar: A little acid to brighten the soup.

How to Make It

Cook until deeply browned, not just gray, then drain.

Stir until the paste darkens.

Add a splash of broth to the skillet and scrape up the browned bits.

Potatoes, carrots, celery, tomatoes, broth, and seasonings.

LOW 6–7 hours or HIGH 3–4 hours.

Add the frozen vegetables for 30 minutes, then the vinegar and salt.

Troubleshooting

  • Bland soup: This is the most common problem by far. The fix is layers of flavor: brown the beef well, cook the tomato paste, use Worcestershire, salt properly, and add a splash of vinegar at the end. Always taste before serving.
  • Greasy soup: Drain the beef after browning, and use 90/10 beef.
  • Mushy potatoes: Russets fall apart. Use Yukon Golds and cut them evenly.
  • Hard carrots: Slice them no thicker than ¼ inch, and keep them under the broth.
  • Soggy pasta: Pasta cooked in the slow cooker soaks up the broth. Cook it separately.

Variations

  • Cheeseburger style: Stir in 1 cup shredded cheddar and ½ cup milk at the end. For a creamier version, see our bacon cheeseburger soup.
  • Hamburger macaroni soup: Add 1 cup cooked elbow macaroni to each bowl.
  • Cabbage: Add 3 cups chopped cabbage with the potatoes.
  • Italian: Use Italian sausage instead of half the beef, plus a Parmesan rind.
  • Spicy: Use diced tomatoes with green chiles and add a pinch of red pepper flakes.
  • Low-carb: Replace the potatoes with cauliflower florets and cook on LOW 5–6 hours.

Make Ahead and Prep Tips

Night before: Brown the beef, onion, garlic, and tomato paste. Chop the vegetables. Refrigerate them in separate containers. In the morning, add everything to the slow cooker.

Don't prep the potatoes too early. Cut potatoes turn gray. Keep them covered in water in the fridge overnight, then drain before adding.

Storing

  • Fridge: Up to 4 days in an airtight container.
  • Freezer: Up to 3 months. Leave an inch of space at the top of the container.
  • Reheat: Warm on the stove over medium heat until steaming, or microwave 2–3 minutes per bowl. Add a splash of broth if it's too thick.

Crockpot Hamburger Soup Questions

Do you have to brown the hamburger before putting it in the crockpot?

Yes. Raw ground beef turns gray and clumpy in a slow cooker, releases grease into the soup, and has much less flavor. Browning takes 8 minutes and makes a big difference.

Why is my hamburger soup bland?

Usually it's under-salted, the beef wasn't browned, or it's missing acid. Brown the beef and tomato paste well, use Worcestershire, and add a splash of vinegar at the end. Taste and salt before serving.

How long does hamburger soup take in the crockpot?

6–7 hours on LOW or 3–4 hours on HIGH, plus 30 minutes after adding the frozen vegetables.

Can I put raw potatoes in the slow cooker?

Yes. Cut them into ½-inch cubes so they cook through in the same time as the carrots.

Can I add pasta or rice?

Yes. Cook it separately and add it to each bowl. Pasta or rice cooked in the soup soaks up the broth and turns mushy.
