Crockpot Chicken Spaghetti

Crockpot chicken spaghetti with Rotel, cream cheese, and melty cheddar: set it in the morning and toss with pasta at dinner.

Cheesy chicken spaghetti casserole with Rotel tomatoes being scooped from a white dish

Rotel, cream cheese, melty cheese, and tender shredded chicken are what make chicken spaghetti a Southern potluck favorite, and this crockpot chicken spaghetti gets you there with about 15 minutes of hands-on work. The chicken cooks in the slow cooker with the tomatoes, onion, and bell pepper, gets shredded right in the pot, and turns creamy once the cheese melts in. It feeds 8 and holds well on WARM.

There's no canned soup here, and the spaghetti cooks on the stove so it never turns gummy. For the oven-baked version with a golden cheese top, see this chicken spaghetti.

Why This Version Works

  • Chicken cooked in seasoned broth. It's flavorful all the way through, not just coated in sauce.
  • Cream cheese and Velveeta instead of canned soup. Together they make a smooth sauce that stays creamy on WARM.
  • Pasta cooked separately. Dry spaghetti cooked in a slow cooker absorbs liquid unevenly and turns gummy. Ten minutes in a pot of boiling water avoids that.
  • Starchy pasta water. A few splashes loosen the sauce and help it cling.

What You'll Need

  • Boneless, skinless chicken breasts. They shred easily after 4–5 hours on LOW. Thighs stay even juicier.
  • Rotel. Diced tomatoes with green chiles, the classic flavor. Use mild for kids.
  • Onion, bell pepper, and garlic. They soften into the sauce.
  • Low-sodium chicken broth. One cup; the Rotel adds more liquid.
  • Smoked paprika and chili powder. Warmth without much heat.
  • Cream cheese. For body.
  • Velveeta or sharp cheddar. Velveeta melts smoothest and holds on WARM; cheddar has more flavor. Half of each works.
  • Spaghetti. Broken in half so it's easier to toss and serve.

How to Make It

Put the chicken in the slow cooker and add the Rotel, onion, bell pepper, garlic, broth, paprika, chili powder, salt, and pepper. Cover and cook on LOW 4–5 hours or HIGH 2–2½ hours, until the thickest piece reaches 165°F on an instant-read thermometer. Shred it right in the pot with two forks.

Stir in the cubed cream cheese and Velveeta, cover, and cook on HIGH 15–20 minutes, stirring once, until smooth. Meanwhile, boil the spaghetti in well-salted water until al dente, save a cup of the pasta water, and drain.

Toss the spaghetti into the slow cooker, adding pasta water a splash at a time until the sauce is creamy. Taste it now: chicken, pasta, and cream cheese are all mild, so add salt, a pinch more chili powder, or a dash of hot sauce until it's right. Scatter cheddar over the top, cover 5 minutes to melt, and finish with green onions.

Troubleshooting

  • Bland. The most common complaint. Season the chicken as it cooks, salt the pasta water well, and taste after the cheese melts.
  • Gummy pasta. It cooked in the slow cooker. Boil it separately.
  • Watery sauce. Too much broth. Stick to 1 cup and let the cheese thicken it.
  • Dry or clumpy. The spaghetti soaked up the sauce. Stir in pasta water or warm broth.
  • Grainy cheese. Pre-shredded cheddar or too much heat for too long. Use Velveeta, or shred cheddar yourself and stir just until melted.

Variations

  • Spicy. Use hot Rotel and add a diced jalapeño.
  • Veggie. Stir in sautéed mushrooms and a few handfuls of spinach with the cheese.
  • Bacon. Fold in crumbled bacon at the end.
  • Rotisserie chicken. Cook the Rotel, vegetables, and broth on HIGH for 1 hour, then add 4 cups shredded rotisserie chicken with the cheese and heat until it reaches 165°F.

For a Potluck

This serves about 8 as a main or 12–14 as a side. Toss in the spaghetti right before you leave and bring a cup of warm broth in a thermos. On WARM, the slow cooker keeps it above 140°F, the safe holding temperature; for the best texture, serve within about 2 hours and stir in a splash of broth every 30 minutes as the pasta drinks up the sauce.

Storing, Freezing, and Reheating

  • Fridge. Refrigerate within 2 hours in shallow containers; eat within 3–4 days.
  • Freezer. Freeze portions in freezer-safe containers up to 3 months. Thaw overnight in the fridge.
  • Reheat. Microwave covered with a splash of milk or broth, stirring halfway, until it reaches 165°F.
  • Make ahead. Cook the chicken and cheese sauce up to 2 days ahead, reheat to 165°F, and toss with freshly boiled spaghetti.

What to Serve With It

A green salad with ranch or Italian dressing, garlic bread, and steamed green beans are all it needs. For more creamy pasta, marry me chicken pasta bake is the oven-baked, sun-dried tomato option, and Cajun chicken and sausage pasta turns up the spice. If you like skipping the canned soup, tuna noodle casserole without canned soup uses the same idea. More hands-off dinners are in these easy slow cooker recipes, including crockpot taco soup.

Cook's Tips

  • Cube the cream cheese. Small cubes melt faster and more evenly than a whole block.
  • Don't lift the lid early. Each peek adds cooking time.
  • Check the chicken, not the clock. Slow cookers vary; 165°F in the thickest piece is the test.
  • Use tongs to toss. They mix long pasta through thick sauce better than a spoon.

Chicken Spaghetti Questions

Can I cook the spaghetti in the crockpot?

You can, but it often turns gummy or cooks unevenly. Boiling it separately takes about 10 minutes and works every time.

Velveeta or cheddar?

Velveeta melts smoothest and holds on WARM without separating. Sharp cheddar has more flavor but can turn grainy. Half and half gives you both.

Why is my chicken spaghetti dry?

The spaghetti soaked up the sauce. Stir in reserved pasta water or broth and serve soon after mixing.

Can I freeze it?

Yes, for up to 3 months. Freeze in portions, thaw overnight in the fridge, and reheat with a splash of broth.

Can I use rotisserie chicken?

Yes. Cook the Rotel, vegetables, and broth on HIGH for 1 hour, then add 4 cups shredded rotisserie chicken with the cheese.
