Step by step
Method

Warm the oil in a heavy pot and cook the onion and carrot over medium heat for 8 minutes, until soft and sweet.

Add the garlic and smoked paprika and stir for 1 minute, until fragrant.

Tip in the beans with their liquid, the stock and the parmesan rind and bring to a simmer.

Simmer gently for 15 minutes, mashing a ladleful of beans against the side of the pot to thicken the broth.

Add the kale and cook 5 minutes more, until tender but still deep green.

Fish out the rind, stir in the sherry vinegar, and season well.

Serve in wide bowls with olive oil and torn bread.
Cook's note
Don't drain the beans. That starchy canning liquid is what gives this stew its body without any flour or cream.
