Step by step
Method

Heat the oven to 425°F (220°C). Mash the butter with the parsley, tarragon, garlic, half the salt and the pepper.

Loosen the skin over the breasts and thighs with your fingers and push two thirds of the butter underneath.

Rub the remaining butter over the outside and season all over with the rest of the salt.

Put the lemon halves in the cavity, tie the legs, and set the bird on the potatoes in a roasting pan.

Roast for 70 minutes, basting once at the 45-minute mark, until the thickest part of the thigh reads 165°F (74°C).

Rest the chicken on a board for 15 minutes while the potatoes finish crisping in the pan juices.

Carve and spoon the pan juices over each portion.
Cook's note
Dry-brine the chicken uncovered in the fridge for a night if you can. It is the single biggest difference between good and crackling skin.
