Step by step
Method

Heat the oven to 400°F (200°C). Toss the tomatoes and garlic with the oil, chilli flakes and salt in a baking dish.

Roast for 40 minutes, until the tomatoes have slumped and the edges are caramelized.

Meanwhile, stir the ricotta with the lemon zest and a pinch of salt and leave at room temperature.

Crush the roasted tomatoes with the back of a spoon to make a loose, jammy sauce.

Boil the rigatoni until 1 minute short of al dente, reserving 1 cup of pasta water.

Toss the pasta into the tomato dish with the pecorino and a splash of pasta water, stirring until glossy.

Serve with spoonfuls of lemon ricotta and torn basil over each bowl.
Cook's note
Finish the pasta in the roasting dish, not a clean pot. Every caramelized patch on the sides dissolves into the sauce.
