Step by step
Method

Knead the flour, eggs and yolk into a smooth, firm dough, about 10 minutes, then wrap and rest for 30 minutes.

Roast the pumpkin cut side down at 400°F (200°C) for 45 minutes, until collapsing, then scoop out and drain the flesh well.

Mash the pumpkin with the crushed amaretti, parmesan, nutmeg and salt; it should hold a soft peak.

Roll the pasta into thin sheets, cut 2 1/2-inch squares, and place a teaspoon of filling on each.

Fold into triangles, pressing out all the air, then bring the two points together and pinch to seal.

Boil in salted water for 3 to 4 minutes, until the seams are tender.

Foam the butter with the sage in a wide pan, add the drained tortelli with a splash of pasta water, and toss to coat before serving with parmesan.
Cook's note
Drain the roast pumpkin in a sieve for twenty minutes. Wet filling is the only reason home-made tortelli burst in the pot.
