I rescaled the recipe, increasing it, so I can use a full two “sticks” or 8-ounce package of butter (vs. the 11 tablespoons in the original).

When using a stand mixer, I start with cold butter.

If you’d like to start with salted butter, skip the kosher salt in the dough.
