Step by step

Method

4 steps

  1. 1

Heat the oven to 350°F. Line baking sheets with parchment. Cream 1 cup softened unsalted butter with ¾ cup brown sugar and ½ cup granulated sugar until light and fluffy, 2–3 minutes. Beat in 2 large eggs and 2 teaspoons vanilla until smooth.

  2. 2

Whisk 2½ cups all-purpose flour, 1 teaspoon baking soda, and ½ teaspoon salt. Mix the dry ingredients into the butter mixture just until no flour streaks remain. Fold in 1½ cups white chocolate chips and 1 cup chopped macadamia nuts.

  3. 3

Scoop 2-tablespoon balls onto the sheets, leaving a couple inches between them. Bake 10–12 minutes until the edges are lightly golden and the centers still look a little soft — they'll set as they cool.

  4. 4

Cool on the sheet 5 minutes, then move to a rack. You want chewy centers with crisp edges, creamy white chocolate, and crunchy macadamias — not dry crumbly cookies or raw doughy middles.
