    Crack 3–4 eggs into a bowl with a pinch of salt and pepper; scramble lightly with a fork — leave them a little streaky so they stay soft. Slice ½ cucumber into thin spears, shred a small handful of carrot, and slice a jalapeño if you like heat. Warm a soft baguette or Vietnamese roll (or any crusty roll) in a 350°F oven 5 minutes or toast cut-side down in a dry skillet until the crust crackles.

    Heat 1 tablespoon oil or butter in a nonstick skillet over medium. Pour in the eggs and push gently with a spatula 1–2 minutes until just set and still glossy — pull them early; they'll finish off-heat. You want soft curds, not browned rubber.

    Split the warm bread, smear lightly with mayo (and a swipe of pâté or butter if you have it). Layer cucumber, carrot, a few cilantro sprigs, and the soft eggs. Splash a little Maggi or soy, or a squeeze of lime. Optional: a quick pickle splash of vinegar-sugar on the carrot.
