    Rinse 1½ cups basmati rice until the water runs clearer, then soak 15 minutes and drain well. Heat 2 tablespoons ghee or oil in a heavy pot over medium heat until shimmering. Add 1 teaspoon cumin seeds, 4 cloves, 4 green cardamom pods (or ¼ teaspoon ground), and 1 small cinnamon stick; stir 20–30 seconds until fragrant — the kitchen should smell like a spice shop.

    Add 1 thinly sliced onion and cook until golden, 5–7 minutes. Stir in 1 tablespoon ginger-garlic paste for 30 seconds. Add 2 cups mixed vegetables (carrot, beans, peas, cauliflower) and sauté 3 minutes until they pick up a little color.

    Add the drained rice, 1 teaspoon salt, and ½ teaspoon garam masala; toast 1 minute, stirring gently so grains get coated but don't break. Pour in 2¼ cups water, bring to a boil, then cover tightly, reduce to low, and cook 15 minutes without peeking.

    Kill the heat and rest covered 10 minutes — this steam-finishes the rice. Fluff gently with a fork, discard the cinnamon stick if you want, and garnish with cilantro and optional fried onions. You want fluffy, fragrant rice with tender vegetables in every spoonful — not mushy wet pulao or hard uncooked grains.
