Method

6 steps

  1. 1

Stir the flaxseed meal and water together in a small dish and set aside 5 minutes to thicken.

  2. 2

Heat 1 tsp oil in a small skillet over medium and cook the garlic about 1 minute, until fragrant. Take it off the heat.

  3. 3

In a food processor, add the drained, well-dried chickpeas, the 1/2 cup panko, parsley, 3 Tbsp vegan parmesan, sesame or hemp seeds if using, coconut sugar, turmeric, cumin, salt, pepper, lemon juice, garlic, and flax egg. Pulse until it holds together when pressed but still has some texture. If it's too wet, add a little more panko.

  4. 4

Scoop about 2 Tbsp at a time and shape into small patties, about 16 in all. Mix the remaining 2 Tbsp vegan parmesan with the 3 Tbsp panko and press both sides of each patty into it.

  5. 5

Heat a thin layer of oil in a large skillet over medium. Cook the fritters in batches, 3 to 4 minutes per side, until golden and crisp, adding oil as needed.

  6. 6

Serve warm in pita or lettuce cups with onion, tomato, parsley, and the garlic dill sauce.
