Cut 1½ pounds boneless chicken thighs into 2-inch pieces. Toss with 1 teaspoon turmeric, 1 teaspoon ground cumin, ½ teaspoon salt, and the pepper.

Heat 1 tablespoon oil in a wide skillet over medium-high. Brown the chicken in one layer for 4–5 minutes, turning once or twice. Move it to a plate; it need not be cooked through.

Lower the heat to medium. Add 1 sliced onion and cook 5 minutes, until softened. Stir in 2 minced garlic cloves and 1 teaspoon grated ginger for 30 seconds.

Add 1 cup chicken broth and scrape up the browned bits. Stir in ½ cup coconut milk and bring the sauce to a gentle simmer.

Return the chicken and any juices. Cover and simmer 8–10 minutes, until the sauce turns golden and the chicken reaches 165°F.

Stir in 1 tablespoon lime juice and a handful of cilantro. Taste for salt and serve over rice or flatbread.
