    Heat the oven to 400°F (200°C). Line a sheet pan with parchment and drizzle lightly with 1 tablespoon olive oil so the bottoms brown instead of sticking.

    In a bowl, gently mix 1½ lb ground turkey (93% lean), ½ cup breadcrumbs, ¼ cup grated Parmesan, 1 large egg, 3 minced garlic cloves, ¼ cup finely minced onion, 2 tablespoons chopped parsley, 1 teaspoon Italian seasoning, 1 teaspoon kosher salt, and ½ teaspoon black pepper. Stop as soon as it comes together — overworking makes dense balls.

    Roll into 1½-inch balls (about 20) and space them on the pan with a little room between each.

    Bake 18–22 minutes until the outsides are browned and the centers hit 165°F. Rest 5 minutes before serving. You want juicy, tender turkey meatballs with a light crust — not dry chalky balls or raw pink centers.
