    Pour in one 13.5 oz can unsweetened coconut milk and 1 cup low-sodium vegetable broth. Bring to a gentle simmer — small bubbles around the edge, not a rolling boil.

    Add 2 lb peeled pumpkin or kabocha squash cut into 1-inch cubes, 1 tablespoon fish sauce, and 2 teaspoons brown sugar. Cover and simmer 12–15 minutes until the pumpkin is tender but still holds its shape — a fork should slide in with little resistance, not turn the cubes to mash.
