    Pat 1½ lb boneless skinless chicken thighs dry and season with ½ teaspoon kosher salt. Whisk ⅓ cup fresh lemon juice, 1 tablespoon fish sauce, 1 tablespoon light soy sauce, 1 tablespoon honey, and ¼ cup water until smooth.

    Heat 2 tablespoons neutral oil in a large skillet over medium-high until shimmering. Lay the thighs in a single layer and sear without moving until deep golden underneath, 5–6 minutes. Flip and cook until browned and cooked through, another 5–6 minutes — thickest pieces should reach 165°F and feel firm. Transfer to a plate.

    Lower heat to medium. Add 4 minced garlic cloves and the tender center of 1 stalk lemongrass, finely minced; stir 30 seconds until fragrant and pale gold.

    Pour in the lemon mixture and simmer until slightly syrupy and glossy, 2–3 minutes — it should coat a spoon, not stay watery.

    Return the chicken and turn to coat in the glaze, 1–2 minutes. Rest 2 minutes, slice against the grain, and spoon extra sauce over the top. Serve with cilantro and jasmine rice. You want bright lemon-glazed chicken with savory depth — not pale under-seared meat or a harsh raw-lemon puddle.
