    Pat 2 lb chicken wings (split at the joints, tips discarded or saved for stock) very dry with paper towels. Toss with 1 tablespoon neutral oil, 1 tablespoon fish sauce, 1 tablespoon fresh lime juice, 3 grated garlic cloves, 1 teaspoon grated fresh ginger, 1 teaspoon brown sugar, and ½ teaspoon ground white pepper until every wing is coated. Marinate at least 30 minutes (overnight in the fridge is better).

    Heat the oven to 425°F. Set a wire rack over a foil-lined sheet pan and arrange the wings in a single layer with space between them — crowding steams the skin soft.

    Roast 35–45 minutes, turning once halfway, until deeply browned and the thickest pieces reach 165°F. Skin should look crisp and lacquered, not pale and rubbery.

    Stir ¼ cup sweet chili sauce with 1 tablespoon fresh lime juice. Brush over the hot wings and return to the oven 3 minutes so the glaze sets sticky — don't leave them longer or the sugar scorches.
