Rinse 1 cup yellow moong dal or toor dal until the water runs clearer. Combine with 3 cups water and ½ teaspoon turmeric in a pot. Bring to a boil, skim foam, then simmer uncovered until the dal is soft and falling apart, 18–22 minutes. Mash lightly with a spoon and stir in ¾ teaspoon salt — it should look creamy and spoonable, not watery soup. Add a splash of water if it's too thick.

In a small pan, heat 2 tablespoons ghee or oil over medium until shimmering. Add 1 teaspoon cumin seeds and let them crackle and darken slightly, 20–30 seconds. Add 2 dried red chilies (or ½ teaspoon chili flakes), a pinch of asafoetida (hing) if you have it, and 2 sliced garlic cloves. Fry until the garlic turns pale gold and smells sweet, 30–45 seconds — pull before it goes brown-bitter. Optional: add 1 small chopped tomato and cook 1 minute until soft.

Pour the hot tadka over the dal — it should sizzle and perfume the whole pot. Stir once to marble the tempering through.

Finish with chopped cilantro and a squeeze of lemon. Serve with rice or roti. You want creamy soft yellow dal with a sizzling cumin-garlic temper — not watery lentil soup or raw bitter spice.
