Method

3 steps

  1. 1

Brown 1 lb ground beef with 1 diced onion in a large pot over medium-high, 6–8 minutes until the beef is no longer pink; drain. Stir in 3 minced garlic cloves and 1 packet taco seasoning (or 2 tablespoons homemade) for 1 minute until fragrant.

  2. 2

Add 1 can (15 oz) rinsed black beans, 1 can (15 oz) rinsed pinto beans, 1 can (15 oz) drained corn, 1 can (10 oz) diced tomatoes with green chiles, 1 can (14.5 oz) diced tomatoes, and 2 cups beef or chicken broth. Bring to a boil, then simmer uncovered 20 minutes so the flavors marry and the soup thickens a little.

  3. 3

Taste and add salt if the broth still tastes flat. Ladle into bowls and pile on shredded cheddar, sour cream, avocado, cilantro, and crushed tortilla chips. You want a hearty, chili-adjacent soup with beans and corn in every scoop — not thin watery broth or bland underseasoned beef.
