    Heat the oven to 375°F (190°C). Brown 1 lb ground beef in a skillet over medium-high, 5–7 minutes; drain the fat. Stir in 1 packet taco seasoning (or 2 tablespoons homemade) and ⅔ cup water; simmer 3–4 minutes until thickened. Mix in 1 can (15 oz) rinsed black beans and 1 cup corn.

    Spread a thin layer of salsa in a 9×13-inch dish. Layer half of 8 small tortillas (quartered), half the beef mix, half of the remaining salsa (from 2 cups total), and 1 cup shredded Mexican cheese. Repeat with the rest of the tortillas, beef, salsa, and the remaining 1 cup cheese.

    Bake uncovered 20–25 minutes until the edges bubble and the cheese is fully melted and lightly browned in spots.

    Rest 5 minutes so the layers set, then top with sour cream, cilantro, or avocado. You want gooey cheesy layers with savory taco beef — not a soggy tortilla mush or dry underseasoned meat.
