    Toss sliced strawberries with granulated sugar; set aside 10 minutes so they release a little juice.

    Beat cream cheese, powdered sugar, and vanilla until smooth. In another bowl, whip heavy cream to stiff peaks. Fold whipped cream into the cream cheese in two additions until fluffy and no streaks remain.

    In a 9x13 dish, spread a thin smear of cream on the bottom. Layer graham crackers to cover (break pieces to fit). Spread about one-third of the cream over crackers, then scatter one-third of the strawberries. Repeat layers twice, ending with cream and strawberries on top.

    Cover and refrigerate at least 6 hours, preferably overnight, until the crackers soften into cake-like layers. Slice with a sharp knife wiped clean between cuts.
