    Cook macaroni in salted boiling water until just shy of al dente, about 1 minute less than the package. Drain; don't rinse.

    In the same pot, melt butter over medium heat. Whisk in flour and cook 1 minute until it smells nutty and looks pale blond.

    Slowly whisk in warm milk until smooth. Simmer 3–4 minutes, stirring, until the sauce thickens enough to coat a spoon. Season with salt, pepper, and mustard.

    Kill the heat. Stir in cheeses a handful at a time until melted and glossy. Fold in the pasta. If it's tight, splash in a little milk. Taste and adjust salt. Serve hot.
