If the noodles are packed tight, loosen them under warm water and drain really well — wet noodles make the sauce watery. Whisk soy sauce, Worcestershire-style sauce, ketchup, and sugar in a small bowl.

Heat the oil in a large skillet or wok over high heat until it shimmers. Stir-fry the pork 2–3 minutes until it's mostly cooked and starting to brown at the edges.

Add the onion, carrot, and cabbage. Toss 2–3 minutes until the cabbage wilts but still has a little crunch.

Add the noodles and the sauce. Toss hard over high heat 2–3 minutes until every strand looks coated and you hear a light sizzle — that's the sauce reducing onto the noodles.

Pile onto plates and finish with aonori and pickled ginger. Eat it hot; yakisoba cools fast.
