    Heat oil in a large pot over medium-high. Add beef, 1 teaspoon salt, and 1/2 teaspoon pepper. Cook 6–8 minutes, breaking it up, until browned with no pink left. Spoon off excess fat if needed.

    Stir in onion; cook 4–5 minutes until soft. Add garlic; cook 30 seconds until fragrant.

    Stir in tomato paste for 1 minute. Add crushed tomatoes, tomato sauce, oregano, basil, sugar, bay leaf, and red pepper flakes if using.

    Bring to a simmer, then lower heat and cook uncovered 25–35 minutes, stirring now and then, until the sauce thickens and tastes rounded. Fish out the bay leaf. Taste and adjust salt. Serve over spaghetti with Parmesan.
