Beat 4–5 eggs with a pinch of salt and 1 tablespoon milk or water. Slice 1 green onion. Have kimchi, rice, and a little toasted seaweed ready — this is a plate, not just eggs.

Warm a nonstick skillet over medium-low with 1 teaspoon oil or a thin swipe of butter. Pour in the eggs. Stir gently with a spatula, pushing large soft curds from the edge to the center every 10–15 seconds. Pull the pan off heat when the eggs are still slightly wet and glossy — carryover finishes them.

Plate rice, spoon the soft scramble beside or on top, and add a small pile of chopped kimchi (warmed in the pan 30 seconds if you like). Optional: a drizzle of sesame oil and crumbled gim.

Eat right away. Eggs should be custardy and soft, not browned or dry; kimchi brings the spicy-sour kick that makes it feel like a Korean breakfast plate.
