    Boil soba noodles in plenty of water according to the package, usually 4–5 minutes, until tender with a little chew. Drain and rinse under cold water, rubbing gently to wash off the surface starch — they should feel slick, not gluey. Drain again very well.

    Whisk a dressing: 3 tablespoons soy sauce, 2 tablespoons rice vinegar, 1 tablespoon sesame oil, 1 teaspoon sugar or mirin, and grated ginger. Taste; it should be savory with a bright edge.

    Toss the cold soba with the dressing, then fold in sliced cucumber, shredded carrot, green onions, and optional leftover chicken or tofu. Add dressing gradually so it coats without pooling.

    Pile into bowls and finish with sesame seeds and nori strips. Serve cold or cool — the noodles should stay separate and springy, not clumped.
