A pork shoulder cooks low and slow with a simple spice rub until it shreds, ready for sandwiches or a game-day tray.
Amounts scale with servings. Pan size and cooking time may need adjusting for larger batches.
Stir brown sugar, paprika, salt, pepper, and garlic powder. Rub the mixture all over the pork.
Scatter the onion in a slow cooker. Set the pork on top and pour vinegar around it, not over the rub.
Cook on low for 8 hours, until the pork shreds easily and reaches at least 195°F in the thickest part.
Shred the meat, discarding large fat pieces. Toss with barbecue sauce and enough cooking juices to keep it moist. Serve warm.

195°F and up is the shredding range. 145°F is safe but still sliceable, not pulled.
A bone-in shoulder works; add about an hour and remove the bone before shredding.
Use a 50/50 mix of broth and vinegar if you want a milder tang.
High for 4½–5 hours works in a pinch. Low gives you more even shredding.
Refrigerate for 3–4 days or freeze for 3 months. Reheat with a splash of juices until 165°F.
