    Heat the oven to 375°F. Cook the macaroni in salted water until just shy of tender. Drain well.

    Melt butter in the same pot over medium heat. Whisk in flour and cook for 1 minute. Slowly whisk in the milk and simmer until the sauce thickens, 4–5 minutes.

    Take the pot off the heat. Stir in 2½ cups cheddar, salt, and pepper until smooth. Fold in the pasta.

    Spread in a 2-quart baking dish. Top with the remaining cheddar and panko. Bake for 18–20 minutes, until bubbling and golden on top. Rest 5 minutes before serving.

A few things that help

Shred the cheddar yourself so the sauce melts smoothly. Pre-shredded cheese can stay grainy.

Undercook the pasta by a minute; it finishes in the oven.

Use what you have

Swap 1 cup of cheddar for Monterey Jack if you want a milder melt.

Crushed crackers can replace panko on top.

Can I assemble baked mac and cheese ahead?

Yes. Cool the sauced pasta, cover, and refrigerate up to a day. Add the topping just before baking and give it a few extra minutes.

Why is the sauce grainy?

High heat after the cheese goes in can make it split. Melt the cheese off the heat and do not boil the finished sauce.
