Method

4 steps

  1. 1

Heat the oven to 375°F. In a large skillet over medium-high, brown 1½ lb ground beef with 1 small diced onion and 1 diced green bell pepper, 8–10 minutes, until the beef is no longer pink and the veg softens. Drain excess fat.

  2. 2

Stir in 1 cup ketchup, 2 tablespoons brown sugar, 1 tablespoon Worcestershire, 1 tablespoon yellow mustard, and salt and pepper to taste. Simmer 5 minutes until the sauce thickens and looks glossy — it should mound on a spoon, not run like soup.

  3. 3

Spread the beef mixture in a greased 9×13-inch dish and sprinkle with 1 cup of the 1½ cups shredded cheddar. Top with biscuit pieces from a 16 oz can of refrigerated biscuit dough (or drop spoonfuls of prepared biscuit mix), then scatter the remaining ½ cup cheese over the biscuits.

  4. 4

Bake 20–25 minutes until the biscuits are deep golden and cooked through in the center (no doughy middle when you peek under one). Rest 5 minutes before scooping so the filling sets. You want savory-sweet beef under golden biscuits and melted cheddar — not soggy underbaked biscuits or dry underseasoned meat.
