Method

4 steps

  1. 1

Heat 2 tablespoons olive oil in a large skillet over medium-high. Brown 1½ lb Italian sausage links (sweet or hot) on all sides until deep golden, 6–8 minutes total — they don't need to be cooked through yet. Remove to a plate.

  2. 2

In the same skillet, sauté 2 sliced bell peppers (mixed colors) and 1 large sliced onion until softened and charred in spots, 10–12 minutes. Add 3 minced garlic cloves and a pinch of red pepper flakes for 30 seconds until fragrant.

  3. 3

Return the sausages. Add 1 can (14 oz) crushed tomatoes if using, 1 teaspoon Italian seasoning, ½ teaspoon salt, and ¼ teaspoon black pepper. Cover and simmer 12–15 minutes until the sausages hit 160°F and the peppers are silky-soft.

  4. 4

Taste, adjust salt, and finish with fresh basil or parsley. Serve in toasted rolls or over pasta. You want browned sausage with soft-charred peppers in a savory tomato pan sauce — not pale steamed veg or dry undercooked links.
