    Rinse ¾ cup toor dal (split pigeon peas). Combine with ½ teaspoon turmeric and 2½ cups water in a pot. Bring to a boil, skim any foam, then simmer uncovered until the dal is soft and mashable, 20–25 minutes. Mash lightly with the back of a spoon — it should look creamy, not whole and chalky.

    Add 2 cups mixed chopped vegetables (drumstick, okra, carrot, pumpkin, or whatever you've got), 1 tablespoon sambar powder, ¾ teaspoon salt, and the remaining ½ cup water (more if it looks thick). Cook until the vegetables are tender when pierced, 10–12 minutes. Stir in 1 tablespoon tamarind paste (or 2 teaspoons lemon juice) and simmer 1 minute — taste; you want tangy-savory, not sour punch.

    In a small pan, heat 1 tablespoon oil over medium until shimmering. Add ½ teaspoon mustard seeds and wait until they pop, 20–30 seconds. Toss in optional ¼ teaspoon fenugreek seeds, 8 curry leaves, and 1 dried red chili; fry 15–20 seconds until the leaves crisp and the chili darkens slightly — don't burn the fenugreek or it turns bitter.

    Pour the hot tempering over the stew — it should sizzle. Rest 5 minutes so the flavors settle, then serve with rice or idli. You want soft dal and tender vegetables in a tangy, spice-warm sambar — not watery yellow broth or raw tamarind bite.
