Heat the oven to 375°F. Slice each chicken breast in half lengthwise to make thinner pieces, then pound them to about ½ inch thick. Pat dry and season both sides with taco seasoning.

Heat the olive oil in a large skillet over medium-high heat. Sear the chicken in batches for 3–4 minutes per side, until golden outside and nearly cooked through. Transfer it to a plate.

Spread the softened cream cheese over the bottom of a 9-by-13-inch baking dish. Layer on the refried beans, salsa, and seared chicken.

Sprinkle the cheddar and Monterey Jack over the chicken. Cover the dish and bake for 15 minutes.

Uncover and bake for 10 minutes more, until the cheese is bubbling and the chicken reaches 165°F in the thickest piece.

Let it sit for 5 minutes, then garnish with cilantro or parsley and serve.
