    Start the pasta in salted water. Scoop out 1/2 cup pasta water before draining.

    In a large skillet over medium heat, melt butter. Add garlic; cook 30–45 seconds until fragrant—don't brown it.

    Pour in cream and bring to a gentle simmer. Cook 2–3 minutes until slightly thickened.

    Lower heat. Stir in Parmesan a little at a time until melted and smooth. Season with salt, pepper, and nutmeg. Toss with hot pasta, loosening with pasta water until it coats every strand. Serve with more Parmesan.
