    Heat oven to 400°F. Pat pork dry and rub with salt, pepper, garlic powder, and thyme.

    Heat oil in an oven-safe skillet over medium-high. Sear tenderloin on all sides until browned, 6–8 minutes total.

    Transfer skillet to the oven (or move pork to a sheet pan). Roast 12–18 minutes until the thickest part hits 145°F. Rest on a cutting board 5–10 minutes.

    Set the skillet over medium heat. Add butter and shallots; cook 2–3 minutes until soft. Add garlic 30 seconds. Pour in broth and scrape up the browned bits. Simmer 2 minutes.

    Stir in cream and both mustards; simmer 2–3 minutes until the sauce coats a spoon. Off heat, add lemon juice and taste for salt. Slice pork into medallions and spoon sauce over the top.
