Heat the oven to 450°F. Slice 2 large chicken breasts into 2–3 pieces each and pound them to about ½ inch thick. Pat them dry so the coating sticks.

Set out three shallow bowls: flour mixed with seasoned salt and pepper; beaten eggs mixed with garlic powder; and breadcrumbs mixed with ¼ cup shredded Parmesan.

Coat each chicken piece in flour, then egg, then breadcrumbs. Tap off loose crumbs so they do not burn in the oil.

Heat ¼ cup oil in a skillet over medium until it reaches about 350°F. Fry two pieces at a time for about 4 minutes per side, until golden. Move them to a rack while you finish the batch.

Spread about 80% of the marinara in an oven-safe baking dish. Nestle in the chicken and spoon the rest of the sauce over the top. Cover with mozzarella, pizza toppings, and grated Parmesan.

Bake for 10–13 minutes, checking at 10, until the cheese is melted and the thickest chicken piece reaches 165°F. Finish with parsley and red pepper flakes, then rest 5 minutes.
