    Optional color trick: warm 2 cans drained chickpeas (or 3 cups cooked) with ½ cup water and 1 black tea bag (or ½ teaspoon instant coffee) 5 minutes. Discard the bag; reserve the dark liquid. Chickpeas should look a shade deeper, not bitter.

    Heat 2 tablespoons oil in a skillet over medium heat. Add 1 teaspoon cumin seeds; when they crackle, 20–30 seconds, add 1 finely chopped onion and cook until deep golden, 8–10 minutes. Stir in 1 tablespoon ginger-garlic paste 30 seconds, then 1 chopped tomato; cook until soft and jammy, 4–5 minutes.

    Add 1 teaspoon chole masala or garam masala, 1 teaspoon ground coriander, ½ teaspoon chili powder, and ¾ teaspoon salt. Stir 30–60 seconds until fragrant. Add chickpeas with the reserved tea liquid (or ½ cup water). Simmer 12–15 minutes, mashing a few chickpeas against the pan so the gravy thickens and turns dry-ish — Pindi style is not soupy.

    Finish bright with ½ teaspoon amchur or 1 teaspoon lemon juice. Top with ginger julienne and cilantro. Serve with bhatura, puri, or rice. You want dark, tangy, dry-ish chole with soft chickpeas — not watery chickpea soup or dusty undercooked spice.
