    Heat oven to 400°F. Line a sheet pan with parchment or lightly oil it. Pat 1½ pounds boneless chicken breasts or thighs dry; if breasts are thick, pound to even ½–¾ inch. Season with salt and pepper. Pulse 1 cup pecans in a food processor (or chop fine by hand) with ½ cup panko or breadcrumbs, ½ teaspoon salt, ½ teaspoon paprika, and optional ¼ cup grated Parmesan until sandy — not pecan butter.

    Set up: flour in one shallow dish, 1–2 beaten eggs in another, pecan mix in a third. Dredge each piece flour → egg → pecan crust, pressing so it sticks. Set on the pan; drizzle or spray lightly with oil.

    Bake 18–25 minutes until the crust is deep golden and chicken hits 165°F. Don't flip hard or the crust can slide; if the top needs more color, broil 1 minute. Rest 3–5 minutes.
