    Add flour, kosher salt, and melted butter. Mix until a shaggy dough forms, then knead 6–8 minutes until smooth and slightly springy. Cover and rise in a warm spot 45–60 minutes until doubled.

    Heat oven to 425°F. Line two baking sheets with parchment. Punch down dough and divide into 6 ropes. Cut each rope into 1-inch bites.

    Bring 8 cups water and baking soda to a gentle boil in a wide pot. Boil bites in batches 20–30 seconds; they should puff a little. Lift out with a slotted spoon onto the sheets.
